Here at Hoot HQ, we take breakfast seriously. For the most important meal of the day, Chris likes to whip up these quick and healthy pancakes.
With just a few simple ingredients, this recipe is perfect for those mornings when you want a treat, with minimal time and effort. No kitchen? No problem! Chris recently threw a batch together on his camping stove to feed hungry friends during a trip to the Grand Canyon. Get 'em while they're hot!
Total time: 10 minutes
Serving Size: 1
A heap of almond or peanut butter
- Blend banana, egg and almond or peanut butter until smooth.
- Heat cast iron pan, add coconut oil, and pour batter. Cook until you see bubbles, flip, and continue cooking on the other side for 2-3 minutes.
When you flip, add some dark chocolate chunks and let them melt. Serve with berries and top off with honey. These hold well if you wrap them in tin foil and take to go!
